I know. I baked. Shocking! To prove it, here is a picture of my product!
I don’t cook much, but I looove to bake. And I have made a promise to myself to be thriftier and healthier in meals in the new house, so thought I would get some practice in today. I found this recipe at Food.com and wanted to share!
Ingredients:
- 1 cup rolled oat (old fashioned oatmeal)
- 1 cup skim milk
- 1 cup whole wheat flour
- 1/2 cup brown sugar, packed
- 1/2 cup unsweetened applesauce
- 2 egg whites
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Directions:

1Soak oats in milk for 1 hour.

2Combine all ingredients in a large bowl.

3Spoon into a muffin pan that has been lightly greased or sprayed with nonstick spray.

4Bake at 400 F for 20-25 minutes.

5Variations: To make Oatmeal Raisin Muffins, Oatmeal Apple Muffins, or Oatmeal Chocolate Chip Muffins, add raisins/chopped apples/chocolate chips to the batter.
I followed the directions exactly, but added chocolate chips to half of ours for the kids. Also, as a note, the directions tell you to spray the pan. I used muffin papers and did not spray. But next time I will spray the papers, as they stuck to the paper badly. After they had completely cooled for a few hours though, they did not stick! They tast great and have a nice texture. I also think next time I will keep half chocolate chip for the kids and make half with blueberries or cranberries, as I think the plain ones needed a little something.
