Raspberry Coconut Bar Smoothie

Raspberry, coconut and vanilla combine to give the flavor of a decadent dessert bar.

  • 1 1/2 cup unsweetened coconut beverage
  • 1/2 cup frozen raspberries
  • 1 scoop plant based vanilla protein powder
  • 1.5 tbsp raw fiber
  • 1-2 tbsp almond butter
  • 1 handful spinach
  • 2 ice cubes


  • Place frozen fruit in blender.
  • Place liquids in the blender.
  • Add all other ingredients.
  • Blend to desired consistency.


This recipe came about as a healthy recreation of my very favorite Christmas treat... my mom's raspberry coconut bars!  Get the flavor without all the added sugar and fat with this nutritious vegan smoothie.
